One of the signature elements of the Hospitality Management Programme is The Restaurant Project. Final year students have four months to develop a concept, set standards, organise marketing, purchasing, finances etc and establish a winning team. The restaurant then operates for four weeks starting the second week of September each year.
Over the last 8 years we have had notable successes with such as Obrigado, The Artisans Kitchen, The Lazy Goat and last year, Casa del Fuego.
Casa Del Fuego was one of our best – the students gelled into a fantastic guest-oriented team and with our loyal band of supporters, friends, local residents, businesses and school stakeholders was fully booked each night.
Watch this space for the 2017 offering. Third year students return from long internship after Easter and begin this journey shortly thereafter.
